Because good things take time: The basic sparkling wine is fermented in 1000 litre oak barrels with the vineyard’s own yeasts and matures in the rock cellar. Its perfect climate gives the sparkling wine the opportunity to develop fully. The second fermentation takes place over 36 months on champagne yeasts in the bottle.
